INGREDIENTS
200g soft dried apricots
50ml boiling water
50g dried apples or dried cranberries or a mixture
50g raisins or dried cherries or a mixture
100g rolled oats
50g dessicated coconut
150g toasted almonds
1tsp ground cinnamon
1tsp almond extract
1tsp vanilla extract
Grated zest of 1 lemon
2tbl honey
METHOD
1. Soak the apricots for 10 minutes (more if hard apricots).
2. Place all the ingredients including apricots and water in a food processesor and blend together: result should be 'damp' but not runny and slightly crunchy not a smooth paste. (If too dry add a litle more water spoonful at a time).
3. Divide the resultant mixture into about twenty portions and role into balls slightly smaller than a golf ball.

Place on a plate in refrigerator for half an hour.

They are then ready to eat. Keep the rest in the refrigerator in a sealed tupperware type box for up to a fortnight.
